In most cases, the processing of fish is an automated process. After cleaning, the fish is beheaded, boned and filleted. This process requires a large amount of water, since food safety and hygiene are essential. Thoroughly cleaning the fish causes a high pollution of the wastewater. During further processing of the fish, preservatives are added such as salt, vinegar, food oils and/or fats. The salts and fats are also an important factor in the choice of a treatment system.
